Charred pineapple, aged Gouda and dandelion

COURSE 2: WILD WATERCRESS AND ARUGULA
Buttermilk croutons, marinated strawberries, Iowa goat cheese and red onions tossed in a Szechuan pepper yogurt vinaigrette

COURSE 3: ROASTED ALASKAN HALIBUT 
Yuzu lemon emulsion, corn and grits cake, micro greens

COURSE 4: RACK OF LAMB PROVENÇALE 
Fondant potatoes, grilled organic Roma tomatoes and green beans
